Hi Leroy,
Definitely not enough dry product, too much wet. The barking comes from the correct proportion of the two, so just keep adding icing sugar until the barking appears (this may seem like quite a lot).

Let me know if that works for you?

Jackie,
I made a batch of the fake ice cream but am having trouble and need your guidance. The issue is I see nice barking on the fringe of the scoop and very nice barking on the fake ice cream mound I am scooping from. The issue is that I am getting a totally smooth and shiny appearance on the half sphere. Is this my scooping technique at fault or do I likely not have enough powdered/icing sugar in the mix for more barking effect? How important is scooping technique and do you have any wisdom to share on that facet?

we did it! The results were great. I think some of the "flavours" look a bit more like frozen yogurt than ice cream, but we're still happy with it. you can see a sample of what we did here
